Beyond fresh seasonal fruits and veggies, I tend to lean heavily on whole grains, beans, nuts and seeds in my diet. Here’s what I like to keep around:
On the shelf:
Rolled oats
Polenta
Brown rice
Quinoa
Millet
Whole wheat flour
Unbleached all-purpose flour
Cornmeal or masa harina
Corn chips
Whole grain pasta
Dried beans – pintos, garbanzos, white beans, and black eyed peas are my favorite!
A few cans of beans (for last minute meals)
Sunflower seeds
Olive and sunflower oils
Vinegar (primarily apple cider)
In the fridge:
Flax seed meal
Yogurt
Butter
Eggs
On Occasion:
Bread
Tofu
Tempeh
Nuts
Cheese
Milk
Mushrooms
Toasted sesame seeds
Tahini or sunflower seed butter (if you have a food processor, you can easily make your own!)
