Tricks of the Trade


One of my favorite things about cooking (and gardening) is that there is such a diversity of methods and approaches. Of course there are some basic principles and indisputable science behind the scenes — you can’t defy the laws of kitchen chemistry or plant anatomy — but there are nearly endless ways of coaxing out beauty. So many possibilities to explore, find what fits best, develop your own style, and mix things up from time to time. It’s an ongoing process, and I know I’m only just beginning, with plenty still to learn and refine. Here are some of the insights I’ve gained so far along the way:
