Tahini Mint Mung Beans

Another amazing combination that would never have occurred to me, but is quite possibly my favorite way to enjoy mung beans now! Simple, rich, and utterly irresistible.

Tahini Mint Mung Beans

2 cups mung beans

2-3 tablespoons tahini

3-6 cloves minced garlic, to taste

A few tablespoons lemon juice, to taste

Lots of fresh mint, minced

Salt and crumbled feta (optional), to taste

Soak and cook mung beans, then stir in remaining ingredients and adjust to taste. It’s that simple. Delicious warm or cool. So good!

To make tahini sauce from scratch: Toast sesame seeds (the easiest way to do this is to spread them dry on a baking sheet at 350°F for about 40 minutes. Then blend with olive oil (3 tablespoons for every cup of sesame seeds), garlic, and lemon juice to form a thin sauce, adjust to taste, and stir into beans along with mint and salt, and feta if desired.
