Ginger Orange Braised Sweet Potatoes

Excited to have fresh ginger on hand again, and was contemplating how to incorporate it into dinner tonight when A Spoonful of Ginger caught my eye from the bookshelf. An interesting collection of primarily from Chinese cuisine, with a handful of tempting recipes I hope to return to soon. Hope they turn out half as good as these sweet potatoes… just the right blend of sweet, bright, and bite! Yum!

Ginger Orange Sweet Potatoes

3 cloves garlic, or to taste

Grated ginger (I used one small piece)

Orange zest from half an orange, or to taste

3 medium sweet potatoes, cut into “matchsticks” or small cubes

3/4 cup broth

3 tablespoons soy sauce, or to taste

1 tablespoon vinegar (rice or apple cider)

2 teaspoons sesame oil

Saute garlic, ginger, and orange zest for about 30 seconds, until fragrant, then add in sweet potatoes and stir-fry for about a minute. Whisk together remaining ingredients and pour in sauce, bring to a gentle boil, then reduce heat and simmer, covered, for about ten more minutes, just until tender but not mushy. Yum!
