Whole Wheat Chocolate Chip Cookies

Been wanting to make a treat for the farmers here, and finally got to it tonight! They were all gobbled down within a day, a delicious and a slightly healthier spin on the classic!

Whole Wheat Chocolate Chip Cookies
(Makes 15-18)

1/2 cup coconut oil or butter
1/2 cup honey or maple syrup
1 egg
1 teaspoon vanilla
1 1/2 cups whole wheat flour
1/2 teaspoon salt
2 teaspoons baking powder
1 cup chocolate chips

In a small bowl, cream together the fat and sweetener, then add egg and vanilla and mix until creamy. Combine the dry ingredients in a larger bowl, then gradually stir in the wet ingredients to form a stiff dough. Fold in chocolate chips, then place spoonfuls of batter on a greased baking sheet, flatten slightly, and bake 10 minutes. Let cool for about five more minutes, then transfer to a cooling rack and try to hold off at least a few more minutes before devouring!
