Glazed Carrots

This weekend, I finally had the opportunity to participate in a long-standing midwest tradition: the wood-splitting party! Of all the delicious dishes we were treated to afterward, the tamari glazed carrots particularly stood out. Ridiculously quick and simple to prepare, with an intense salty-sweet flavor that will blow your taste buds out of the water. So. good.

If you love spicy and sweet, another of my favorite ways to cook carrots is glazing them with a little butter and a generous sprinkling of ginger. You can even skip the butter completely and simply steam the carrots with ginger or a few splashes of tamari.

Glazed Carrots

2 pounds carrots, sliced

About 1/4 cup tamari (or water)

2 tablespoons butter

Sprinkle black pepper, to taste (optional)

1/4 teaspoon ginger, powdered or freshly grated, or to taste (optional)

Simmer together, covered, for about 10 minutes, or until carrots mostly tender. Uncover and cook for a few more minutes, stirring occasionally, until liquid thickens to a glaze, stirring occasionally. Adjust seasoning to taste and enjoy!
