Right now, collard wraps are the hottest lunch trend here at the Borner Farm. Any combination of grains, veggies, or beans is so much more fun when its rolled in a few blanched leaves. A great way to dress up leftovers, add an extra dose of green to the meal, and put an overabundance of giant collards to good use!
Simply cut out the stem of each collard leaf, leaving two half moons. Meanwhile, bring a pan of water to a boil, and dip the leaves in for about thirty seconds to blanch them, until they soften but retain their form and bright green color. Alternately, you may be able to steam them instead. Then overlap two of the collard leaves on your plate to form a circle, place a generous scoop of whatever filling you desire, roll it up like a burrito, and enjoy!
