Torta de Arroz

A wonderful Ecuadorian treat my host-sister made for New Years Eve. It’s only taken me a year to post it! A rich rice pudding, baked until it can be sliced up as a cake. It takes forever to firm up, but it’s worth the wait! I might also try increasing the temperature a little next time.

Torta de Arroz2 cups cooked rice

1 1/2 cups milk

Cinnamon, nutmeg, cloves, and raisins

2 eggs, beaten

1/2 cup sugar, or to taste

1/4 teaspoon salt

Preheat oven to 350ºF. Mix the rice, milk, spices, and raisins and heat over a low flame, stirring constantly. When most of the liquid is absorbed, mix in the eggs, little by little, and then the sugar and salt. Remove from heat and pour into a greased cake or baking pan and bake for 45 to 90 minutes, or until golden and firm. Let cool, then cut into slices. Yum!
