No-Bake Granola Bars

This was my first experiment cooking with kids at Slide Ranch! They were a rousing success — it was quick, easy, and fun to mix together a few simple ingredients and fresh berries we picked from the trail and garden. A bit crumbly, so the recipe could probably use a little tweaking, but it’s delicious! Definitely a keeper.

No-Bake Granola Bars

5 cups rolled oats

2/3 cup honey

1/2 cup oil

1/2 cup sugar

1 tsp. vanilla extract

1/2 teaspoon salt

1-2 cups fresh berries (or whatever you feel like!)

Whisk together honey, oil, sugar, vanilla, and salt until dissolved. Add oats to the mixture and stir in, then gently mix in the berries. Cover 2 baking pans with wax paper, then press down firmly into 2 baking pans. Then cover it with a cloth or foil and stick in the fridge for at least 1-2 hours. Uncover, remove the block from the pan, and cut into bars. Yum!
