Black bean tacos and roasted corn

One of the easiest meals I’ve ever whipped together. I preheated the oven to 350ºF and removed the outer layer of the husks, peeled back the inner husks, removed the silk and lightly coated the ears with oil, then pulled the husks back up and roasted them right on the top rack for about 30 minutes. Meanwhile, I sauteed some onion and garlic in oil, then mixed in a couple cans of black beans and let it simmer a little. Then I heated up some tortillas and sliced some red peppers for quick and delicious make-your-own tacos.  Got rave reviews. Mmm!

I bet this would be even more amazing (albeit not quite so simple), with roasted peppers. Will try it soon!
