Gado-gado: veggies in peanut sauce

First cooking adventure in a new kitchen! (I’m staying with a friend in Michigan for the week.) Today I finally got a chance to cook up a dish I’ve been wanting to make for ages — one of the first things I ever cooked actually, based on the Moosewood Cookbook.

I served this with steamed broccoli and carrots. For some reason, I so often undervalue steamed veggies, afraid they’ll be soggy and flavorless, but they were bursting with flavor. Yum!

Peanut Sauce

1/2 tbsp. oil

Chopped onion

2 cloves garlic

1 cup peanut butter

1/4 tsp. cayenne

1/4 tsp. ginger

1 tbsp. vinegar

1/2 tbsp. soy sauce

2 1/2 cups water

In a small saucepan, sauté onion and garlic in oil until soft. Add the rest of the ingredients and mix together to form a sauce, then simmer for about 30 minutes, stirring occasionally. Pour over raw or steamed seasonal vegetables, and rice or noodles.
