Colorful corn chowder

Sooooo good! I love corn chowder, and this was exceptional! Full of flavor, didn’t need a bit of salt and pepper! A great recipe from SimplyRecipes, I’ll definitely have to come back and check out this site some more! I would never have guessed to put the corn cobs in, love how milk soaks up flavors. I bet you could even make this without the corn kernels (maybe reduce the milk a bit or add more potatoes) to put corn cobs to good use! With a can of beans and steamed green beans it made for a lovely, filling meal (with a little soup left over).

Colorful corn chowder

1 tbsp. butter

Chopped onion

Chopped red pepper

3 baby carrots (or a small carrot) chopped

3 ears of corn, corn cut off from cob (don’t throw away the cobs!)

4 cups milk

Bay leaf

5-6 small potatoes

3 stalks thyme

Melt butter in the bottom of a large saucepan. Sauté onions for a minutes, then add carrots and bell pepper. When onions are soft, add corn cobs and milk. Bring to a boil, then lower to a gentle simmer. Simmer 15 minutes, then remove corn cobs, add potatoes, and gently simmer about 15-20 minutes, until tender. Add corn and thyme and simmer about 5 minutes more, then enjoy!
