Banana bread

My father’s sacred banana bread recipe he finally shared with me… no other banana bread compares, and I’m so excited to be able to make it now! The challenge was rounding up three ripe bananas, since we’re all avid banana eaters, but I finally was able to save up enough (for future reference: much better to freeze them without the peel.)

Banana Bread

1 3/4 cup flour

2/3 cup sugar

1 tsp. baking powder

1/4 tsp. baking soda

1/2 tsp. salt

1/2 cup oil

3 ripe bananas, mashed

2 eggs, beaten (can use flax eggs)

1/2 cup chopped walnuts

Preheat oven to 350ºF. Mix dry ingredients, then mix in oil with a fork to make a coarse, chunky dough. Stir in eggs and bananas just until blended, then mix in walnuts. Pour into greased 9×5 loaf pan. Bake 45-55 min., let cool for 10 min. in the pan, then place on cooling rack and try to hold off for at least 10 min. more before devouring!
